What is a Kaafir?

I am going to paraphrase the definition I found of a Kaafir made by Al-Qaadi ‘Ayyaad
A kaafir is:
1. anyone who follows a religion other than Islam,
2. any Muslim who agrees with people that follow other religions,
3. any Muslim who has doubts,
4. any Muslim who says that ways other than those defined in Islam are correct (even if that person appears to be a Muslim and believes in Islam and that every other way is false)

Al-Qaadi ‘Ayyaad said: hence we regard as a kaafir everyone who follows a religion other than the religion of the Muslims, or who agrees with them, or who has doubts, or who says that their way is correct, even if he appears to be a Muslim and believes in Islam and that every other way is false, he is a kaafir.
I also found this statement on an Islamic page to a question asking:
"Is it true that anyone who does not accept that kuffaar are kuffaar is a kaafir himself?"
The response was:
"Yes, this is correct. Whoever is not convinced that the person who disbelieves in the religion of Allaah is a kaafir, does not believe what Allaah has told us about their being kaafirs, and he does not believe that the religion of Islam abrogates all previous religions and that all people must follow this religion no matter what their religion was before."
It then went on to quote several sources to back up the statement.
While the text stayed with a kaafir is someone that does not believe in or follow Islam it seemed to have undertones that there was something more to the definition.
Perhaps meant to be an insult? Or perhaps something worse?
Hopefully someone that actually practices Islam can help with giving better a better definition and understanding this and other questions.
